Cauliflower pizza crust

Prep Time

10 -15 minutes

Prep Notes

Place a medium head of cauliflower, broken into pieces, into a food processor. (about 4 cups) and pulse until it is about the size of rice.

Place cauliflower into a steamer and steam for 5-6 minutes.

Let cauliflower cool for a couple of minutes and place it on a thin dish towel or cheese cloth. Wrap it up and squeeze all of the water out of it. There will be a lot of water and you need to squeeze as much of the water out as you can. This is what makes or breaks the "crust".

Cooking Time

40 minutes


1 pizza


1 head of cauliflower, riced, steamed and water squeezed out. 

1 egg

1/4 tsp salt

1tsp oregano

1/4 cup of parmesan cheese (optional)

2 cloves of minced garlic


Preheat the oven to 350º

Place cauliflower "dough" into a large bowl.

add oregano, garlic, salt and beaten egg into the mixture and mix together with a wooden spoon or spatula.

add the parmesan and mix well.

Place the mixture onto a cookie sheet lined with parchment paper and sprayed with coconut oil spray.

Shape the mixture into a crust. I usually make it a rectangle, but you can use a round pan if you want a round pizza. Press the mixture  firmly together and shape the edges to form a higher crust if you like.

Place it in the oven and bake for 35 minutes. Remove from the oven and flip the crust over and bake for another 5 minutes to get any moisture out. 

Remove from the oven and add toppings of your choice. Place into the oven for 10 more minutes. Enjoy!
