Soak 3/4 cup Quinoa in a bowl of water for 8 hours. Drain and rinse.
3/4 cups Quinoa soaked, drained ad rinsed
1/4 cup water
1 tsp aluminum free baking powder
2 cloves of minced garlic
1/4 cup shredded parmesan cheese (optional)
1/4 tsp salt
Preheat oven to 425º
Place Quinoa, water, baking powder and salt in a food processor and pulse for 2 minutes. Push down sides if needed. Add garlic, oregano and parmesan and pulse until blended. Line a cooking sheet with parchment paper and spray paper with coconut oil. Pour mixture onto the parchment paper and spread out into a rectangle. Place it in the oven and bake for 15 minutes. Remove it from the oven and flip the crust over and place back in the oven for 5-10 more minutes. Remove from oven and add toppings of your choice. Bake for 10 more minutes or so.
